I try to make a point of eating greens every day but once in a while I get tired of eating raw salads, or sometimes I just don’t feel like eating cold food (especially on cold winter days like today….brrr!).
This cooked kale recipe is my go-to side dish this winter. It’s loaded with garlic which is great for your immune system during cold and flu season (and it tastes soooo good). If you’re a garlic lover like me then give this Garlicky Sautéed Kale a try!
Ingredients:
1 tbsp ghee (or avocado oil if vegan)
3-4 cloves garlic, pressed or minced
4 large kale leaves, chopped
Salt and pepper to taste
Directions:
1. Heat the ghee or oil in saucepan over med heat, add garlic and sauté for a few minutes until lightly browned.
2. Add the chopped kale, stir well and sauté for a few mins, stirring often. Lower the heat, cover, and cook for another 10-15 mins until the kale is tender (stir a few times while cooking to prevent sticking).
3. Season with salt and pepper and enjoy!
